I had the pleasure of dining at L'Entrecôte in Bordeaux, where the menu is very similar but with its own quirks - the meat was faux-filet cooked to the guests' specifications, and it comes with a simple salad, all-you-can eat perfectly-cooked frites and that lovely mystery butter sauce plus the house red wine and a limited but delicious selection of desserts. I read somewhere that the owner of L'Entrecôte opened his first restaurant in Paris and was inspired by the original Café de Paris in Geneva, mystery sauce and all. Ah, your article has made me nostalgic about my time working in France!
